White Chicken Chilli

Chilli... in a healthy and IC friendly form.  Score!!!  Found here... modified slightly.

Ingredients:
1lb Ground Chicken
2 Cans White Cannelloni Beans (one regular, one mashed for thickness)
1/2 C chopped Sweet Onion
1/2 C chopped Celery
1/2 chopped Red Bell Pepper
1/2 chopped Yellow Bell Pepper
2 Cups Chicken Stock
1 Tbsp Minced Garlic
1 Tbsp All Purpose Flour
1 tsp Cumin
1 tsp Dried Oregano
1 Tbsp Olive Oil
Salt & Pepper to taste
Garnish with friendly cheese (Mozzo or mild cheddar for me) and Sour Cream if you can handle.

Directions:
In a large Pot over medium heat warm the oil.  Add chopped veggies and sautee for 5 min.  Add chicken and cook through (at least 5 minutes).  Add the garlic, flour, cumin and oregano.   Cook, stirring over low heat 2 minutes.   Add the broth while stirring.  Increase heat and bring to a boil stirring occasionally.  Reduce hea tto simmering and cook 10 minutes longer.   Add the beans.  Season with salt and pepper.  Add garnishes if wish.

  2. Sounds delicious! I too had IC for 7 years until I figured out it was GLUTEN!! I am 100% cured of it - no more Elmiron, no more weekly distillations in my bladder.   3. I was diagnosed with IC yesterday and am trying to figure out what I can and can't eat. My dr. Gave me a long list of foods to avoid for the first month and then I can try to reincorporate one food at a time to see if it will cause problems. Onions is one of the foods to avoid, have you found that onions don't bother you?

  4. I wanted to Thank YOU over and over again. I literally teared up when I found your blog! I am newly diagnosed and felt completely overwhelmed by everything. I was afraid to eat and when I did eat it was celery, carrots and cashew butter. Now I am beginning to see that if I put some time into my dinners I can eat like a normal human. Thanks so very much. I know all this must have been so taxing, but I can tell you that you have made a huge difference in my life! Wish I could hug ya ;)

  6. This white chicken chilli is great. My friend is a cook and she loves preparing these dishes. Will recommend her this recipe as she loves spicy food. She will definitely love it. Have found out some more healthy recipes from Nom Photo App. Will prepare them too.

  8. Hi found your blog...my husband was IC diagnosed for several years, I always find hard to cook for him and give variety in his food. Does onion and parmesan cheese or cream cheese not bother you? As he is always afraid to try new food. so far he still only can have mild cheddar cheese to his diet.
