Coconut Custard Pie

I made this for Christmas this year and was adored by all!!  I found it in Real Simple magazine.
Ingredients:
14 oz can Sweetened condensed milk
13.5 can coconut milk
3 large egg yolks
1/4 tsp kosher salt
flaked or shredded coconut

Parbaked 9 inch pie crust (use this recipe, poke holes in the bottom with a fork and cook for 10 minutes to before adding filling to "parbake" it)

Whisk together sweeteened condensed milk, coconut milk, egg yolks, and kosher salt.   Pour into the Parbaked pie crust and bake at 325 until the center is set by still slightly wobbly.   (Recipe says 50-60 minutes, but baked mine 70 min).  Let cool, then chill until firm, 4-5 hours.  Before serving, top with 1/4 Cup Flaked coconut.   I added more... and was probably too much.

  1. hi! newly dx...im 32...im so confused about which foods r safe? i though Peanut butter was! ive been eating it..and i though green peppers & onions were no...ugh..soo confusing!

  2. Hi Southbay Newlyweds!!! I'm 32 as well!!I'm sorry you're so confused... it IS confusing!! We are all different. I was scared to try Peanut Butter because it used to be on the no-no list... but has recently moved to the safe list. I still avoid it when I'm flaring cause I'm a big ole scardy cat!! And I believe green peppers and cooked onions are on the "maybe list". I'm usually okay with the maybe list, but again stear clear if I'm flaring at all. I tend to go months between flares... but then when a flare comes, can take months to get over. Also, I can eat "bad" on occasion, but if I'm bad alot in a row, it can trigger a flare. I hope you can figure out how your body works quickly... it can be a long annoying process!!! I've been there. *hugs*

  3. Hi niki. Im 18 and just got diagnosed and im literally afraid to eat. I thought onions were on the no no list, also cheese, and cheese is my favorite thing ever. Im just really scared and confused.
